I love this recipe as a nice, fresh alternative to a greens-based salad. It also works great as an easy no cook summer side dish with grilled chicken or a yummy party dip with pita or tortilla chips.
Ingredients:
- Red Bell Pepper
- Tomato
- Cucumber
- Feta Cheese
- Hummus
- Plain greek yogurt

Steps:
Peel cucumbers & dice. (Be sure to remove the seeds and “mushy” parts so that your salad doesn’t get watery.
Remove seeds and dice bell pepper.

Dice tomatoes. (Again be sure to remove the seeds and “watery” parts)


Spread 8 oz of hummus on bottom of dish.
Layer 8 oz of greek yogurt on top of hummus.
Mix pepper, cucumber and tomato and layer on top of the greek yogurt.
Sprinkle feta cheese on top.
Eat up!

*This dish is best eaten right away – if you plan on eating it later on, keep the layers stored separately and put together prior to eating or it will get a little watery.
